Summer is vastly approaching and I wanted to create a vibrant cupcake that would fit this weekend barbecue. Inspired by the popular summer drink, lemonade, this cupcake has a vanilla base and is topped with lemon buttercream, assorted sprinkles, and a fresh strawberry. Fresh fruit is always a great topper to use because they add freshness and light tartness to the sweet frosting. There is no party without a delicious dessert to finish off the meal. Prior to baking cupcakes for a party, I usually go through my pantry and take a stroll through the baking aisle at my local grocery store for inspiration. For this particular party, the process was no different. As I was walking through the grocery store, I noticed that there were Limited Edition Red Velvet Oreos which led me to an aha moment. Red Velvet is a southern chocolate cake that is infused with food coloring to give it that vibrant red color. It is a classic cake flavor used almost all the time and tweaked for every occasion. It is best paired with a fluffy cream cheese frosting. For decorations, crushed up cookies truly add that extra crunch and pair perfectly with the moist cake and velvety frosting.
